“May your pockets be heavy and your heart be light, and may good cookies follow you morning and night.”
Looking for a cookie that packs a punch without even turning on the oven? These No-Bake Baileys Cookies are fast, festive, and freakin’ fantastic. Rich chocolate flavor, creamy Irish cream, and just the right amount of chew—these are not your grandma’s oatmeal cookies. Unless your grandma’s cool enough to spike her cookies. Then carry on.
Perfect for St. Patrick’s Day, chill nights, or "I just want something awesome right now" moments.
½ cup unsalted butter
¾ cup granulated sugar
¼ cup brown sugar
¼ cup unsweetened cocoa powder
¼ cup whole milk or 2% milk
½ cup Baileys Irish Cream
½ tsp vanilla extract
¼ tsp salt
3 cups quick oats
½ cup chopped hazelnuts or pecans (optional)
½ cup mini chocolate chips
Line a baking sheet with parchment paper or a silicone mat. You want these babies to set up nicely.
In a medium saucepan over medium heat, combine:
butter, granulated sugar, brown sugar, cocoa powder, and milk.
Stir constantly and bring to a gentle boil. Let it bubble for 1 minute, then remove from heat.
Stir in Baileys Irish Cream, vanilla, and salt.
Then fold in quick oats, mini chocolate chips, and nuts (if you're feelin’ fancy). Mix it up until well coated.
Drop tablespoon-sized portions onto your prepped sheet.
Let them set at room temp for 30 minutes, or pop them in the fridge if you’re in beast mode and can’t wait.
Store in an airtight container at room temp for up to 5 days—or keep in the fridge for that perfect chewy bite.
Extra Baileys Flavor – We don’t hold back on the Irish cream.
Chewy, Chocolatey Goodness – Like a brownie and a no-bake had a glorious cookie baby.
Zero Oven Required – You’re done in 20 minutes flat. Clean, easy, and dangerously snackable.
Add a drizzle of white chocolate for that “I made these fancy” flex.
Craving crunch? Toss in some crushed pretzels.
Want it more intense? Use dark cocoa powder for a deeper chocolate vibe.
